Throttle control question. There's a brake gamma curve in Assetto Corsa, but is there a way to adjust throttle curve? I spin out a lot in RWD cars because the pedal on my T3PA seems to not really register gentle pressure in the game. It goes from zero to like 10% with a light tough, and then straight up to 100% with a little more pressure.

Deadzone 4%. Gamma 220%. Any setting which doesn't utilize 100% steering speed is simply useless, rendering your reactions slower. You need to be able to whirl that wheel to its full potential in order to be competitive with a controller. I guess the setting would feel a bit better with the deadzone working.
And you go to control panel - devices and printers - right click on your wheel controller - game controller settings. There you can define priority. Now test in game and see if it works. Maybe just this time you'll need bind everything inside the game, and test out again after you restarted pc.
