tldr: it mostly depends on the destination, but you'll mostly find better deals and have overall good experience via booking.com and Airbnb. The vast majority of all accomodation is available via 3 big players: Booking Holdings, Expedia Group and Airbnb. The first 2 corporations own a large number of brands that they bought over the years. Since it was the off-season, everything was less expensive. Hotel rooms were dirt cheap - about $25-30 per night. Yeah, these weren't high-end places, but they weren't fleabags either. Most of them also included some sort of breakfast. Even if it was just coffee and donuts, it helped get us started for the day and helped keep costs down.If you are flexible to leave last minute (like booking train 1-2 days before leaving), you can sometimes get a killer deal if they haven't filled up sleeper rooms. It's only like a 10% chance for a given date though and if it doesn't happen fares can go up or the train can be fully booked, so if you aren't that flexible you should book in advance.
